Pumpkin Bread

I used all spelt flour when I made this loaf. It didn't rise as nicely as it would have with white flour, but the flavor is still wonderful. I usually do part white flour and part whole wheat, but tonight I was feeling extra healthy. The orange juice gives this recipe an additional flavor that we really like.

3 1/2 cups flour
1 tablespoon plus 2 teaspoons pumpkin pie spice
2 teaspoons baking soda
1 1/2 teaspoons salt
1/2 cup honey
1/2 cup maple syrup
1/2 cup orange juice concentrate
1 15 oz. can pumpkin (or 2 cups fresh)
4 eggs
1 cup oil (can substitute part applesauce)

Coat 2 glass bread pans with non-stick cooking spray. Combine wet ingredients in a large bowl. Combine dry ingredients in a medium bowl. Add the dry to the wet and stir until combined. Pour into prepared pans. Bake at 350 for 50-55 minutes. You may need to cover with foil the last 5-10 minutes of baking. Let cool in pans 10 minutes before transferring to wire rack to cool.

  1. My daughter made this bread today with all whole wheat flour and it was wonderful. We found your blog a while ago when we searched for molasses cookie recipes. You have wonderful recipes. We are trying to get rid of white flour and sugar, thanks for your help.
